How To Cook Bacon Pancakes

Ingredients
 

8 slices of crispy fried bacon

2 cups of all-purpose flour (spooned and levelled)

3/4 teaspoon salt

3 tablespoons sugar

1 tablespoon baking powder

1 ½  cups milk

3 tablespoons vegetable oil

2 eggs, whites and yolks separated

 

Directions

 

Step 1


Cook Bacon - Cook bacon and crumble the long slices. You can easily cook bacon in the oven using bacon oven racks. This method gives you crispiest bacon ever. Set them aside while you make the pancake batter.

Step 2

 

Make The Pancake Batter - In a medium-sized bowl, mix all the dry ingredients like flour, salt, sugar and baking powder together. In a separate bowl mix all the wet ingredients like milk, egg and vegetable oil and mix until they are all combined together. Whisk all the wet and dry ingredients together. Don’t worry even if there are small lumps in the pancake batter, it’s okay to have some. Mix well and set your batter aside. 

 

Step 3

 

Start Cooking - Preheat the griddle or skillet over medium heat at 200 degrees. Lightly grease the griddle. Then add ¼ cupful of batter onto the hot griddle with bacon over it. Cook until it turns golden brown and some bubbles appear on the top of pancakes. Flip it to cook evenly from both sides. Cook each side for at least 2 mins. Repeat the same process with the remaining batter. Serve it topped with maple syrup.

Note - If you like small pieces of bacon in the pancake then chop the bacon slices and sprinkle it onto the pancake batter when it is on the griddle. Cook some omelette alongside.

Tips For Serving

Top this pancake with maple syrup, butter, buttermilk syrup or any of your favourite pancakes toppings with some scrambled eggs on the side for a full-on breakfast meal. If you are making a large batch of pancakes for the entire crowd, put your finished pancakes on baking oven pan or sheets and place it in 200 degrees Fahrenheit heated oven. Don’t cover them, the steam will make the pancakes mushy.
